Last Wednesday, Martin and I had my friend Meredith and her boyfriend Loren over for a fun-filled mexican fiesta night. We have been talking about having a dinner date night and she asked me to teach her how to cook. Meredith is quite possibly one of the most entertaining people I have ever met and the thought of teaching her how to cook was too good to pass up.
Now, you have to know that she was a vegetarian until recently and has just started trying different foods like chicken and other things. So when I pulled the package of chicken out of the refrigerator and handed it to her, the look on her face was priceless. I handed her a knife and told her she had to cut it up to get started; good thing she had a margarita in the other hand.
We made chicken enchiladas, laughing most of the time, either at each other or the guys. Her mom sent me this really cute margarita salt dish for watching their cats while they were away. Super fun. And Loren makes a pretty good margarita!
Next night...we're thinking barbecue, but we're also thinking it is the guys' turn to cook, so we will see!
