Heaven in a Bowl

Avocadoes + Tomatoes = Delicious Guacamole! This is one of my favorite snacks to make. I most often have it on enchiladas or with tortilla chips but you can ask Martin, I have been known to eat it with a spoon.

I started off with a perfectly ripe avocado and a plum tomato.

I got a medium glass bowl, my pastry dough cutter, and a sharp knife. I cut the avocado in half (carefully!) and popped the seed out of the center using the blade of the knife. While the flesh of the avocado is still in the skin, I dice it, then use a spoon to scoop it out into the bowl. Added a little lemon juice, garlic salt, extra virgin olive oil, minced garlic, and cracked black pepper. I used the pastry cutter to mash the avocado and then diced the tomato and added that in.

I stirred it all up and added a little more salt and pepper to taste.

A delicious and healthy snack...and then there's the tortilla chips. :)
