Can you say yum?

My mother in law sent us a Green Chile Stew mix and since it was pretty darn chilly and Martin was feeling a little under the weather I decided to give it a try.
I couldn't believe how easy it was. Inside the can there are dehydrated potatoes and vegetables mixed together and four packages of seasoning. The directions are on the side and it's easier than I imagined: Just Add Water!

And there are ideas for add-in's, from cheese and beef to chicken and sour cream. I had some sour cream leftover from tacos the other night and chicken in the freezer so there you have it.

I started by heating up my soup pot with some extra virgin olive oil.

I diced up the partially defrosted chicken breast, tossed it into the pot and added some minced garlic, salt, and pepper.

When the chicken was cooked through I added 1 cup of the potato and vegetable soup mixture and 1 seasoning pouch. Stir, add 6 coups of cold water, stir again, cover and let simmer for 30 - 45 minutes on low heat.

The whole house smelled like chicken and green chile...yum. I opened the pot, stirred, and doled out two servings. I dolloped on some sour cream and sprinkled with cracked black pepper. Alongside I piled some tortilla chips and we were ready to dig in! And boy oh boy was it delicious!
